Grape juice

Thomas Bramwell Welch (December 31, 1825 – December 29, 1903) was a British–American Methodist minister and dentist. He pioneered the use of pasteurization as a means of preventing the fermentation of grape juice. He persuaded local churches to adopt this non-alcoholic wine substitute for use in Holy Communion, calling it "Dr. Welch's Unfermented Wine."

Must (from the Latin vinum mustum; lit. 'young wine') is freshly crushed fruit juice (usually grape juice) that contains the skins, seeds, and stems of the fruit. The solid portion of the must is called pomace and typically makes up 7–23% of the total weight of the must. Making must is the first step in winemaking. Because of its high glucose content, typically between 10 and 15%, must is also used as a sweetener in a variety of cuisines. Unlike commercially sold grape juice, which is filtered and pasteurized, must is thick with particulate matter, opaque, and comes in various shades of brown and purple.

Welch Foods Inc., commonly known as Welch's, is an American company, headquartered in Concord, Massachusetts. It has been owned by the National Grape Cooperative Association, a co-op of grape growers, since 1956. Welch's is particularly known for its grape juices, jams and jellies made from dark Concord grapes and its white Niagara grape juice. The company also manufactures and markets an array of other products, including refrigerated juices, frozen and shelf-stable concentrates, organic grape juice, fruit snacks, and dried fruit. Welch's has also licensed its name for a line of grape-flavored soft drinks since 1974. Welch's grape and strawberry soda flavors are currently licensed to Global Beverage Corporation. Other popular products that use the Welch's name are the fruit snacks made by The Promotion In Motion Companies, Inc.

Welch Factory Building No. 1 is a historic grape juice factory located at Westfield in Chautauqua County, New York. It was built in 1897 and expanded in 1899 and 1903, to be an 8-bay wide, 10-bay deep rectangular building. It is the oldest extant structure associated with the Welch's company.

Grape juice is obtained from crushing and blending grapes into a liquid. In the wine industry, grape juice that contains 7–23 percent of pulp, skins, stems and seeds is often referred to as must. The sugars in grape juice allow it to be used as a sweetener, and fermented and made into wine, brandy, or vinegar.
